Eve Persak, MS RDN CNSC CSSD, attended Pepperdine University where she received her bachelor’s degree in Nutritional Science. After taking a year off to volunteer with a medical team in Africa, she returned to complete her dietetics internship with the University of Southern California UCEDD / Children’s Hospital Los Angeles coordinated program and her Master of Science degree from California State University, Northridge, concurrently. Upon passing the Registered Dietitian examination, Eve chose to hone her skills in a hospital setting, supporting patients with infectious and gastrointestinal diseases, cancer and surgical recovery. Soon thereafter, she earned recognition as a Certified Nutrition Support Clinician. This distinction, held by fewer than 5000 medical professionals worldwide, allows Eve to provide advanced nutritional therapies to patients requiring acute and intensive care. She has maintained these credentials for a decade, and, also has achieved board certification as a Specialist in Sports Dietetics.
Founded on this pedigree of education and clinical experience, Eve’s career has expanded to include corporate consultancy and private nutritional counseling.
In her corporate consultancy, Eve advises brands — from start-ups to Fortune 500 companies — in the travel, hospitality, culinary, energy & sustainability, media & entertainment, food & supplement, sport & fitness, and health-tech industries – on six of the seven continents. Her interviews, programs, projects, products and writing have been featured worldwide in publications, like The New York Times, Michelin Guide, Forbes, Travel & Leisure, Health & Cuisine, Town & Country, Vogue, Shape, Women’s Health, and Harper’s Bazaar,to name a few.
In her private practice, Eve collaborates regularly with interdisciplinary healthcare teams and counsels a diverse and international community of individuals and families with concerns and goals such as weight loss, hormonal balance, longevity, digestive conditions, athletic performance, food allergies and intolerances, immunity, and chronic disease prevention and management. She takes a personalized, sustainable, 360-degree approach to patient care — addressing specific areas of concern in a way that honors each individual’s unique needs and promotes wellbeing for the body as a whole. She’s fascinated by the dramatic dermatological results that even modest nutritional changes can make and loves supporting her patients at the Derm Institute of Chicago to achieve healthy, clear, and youthful skin.
